so even if it’s my wife, my kids, my customers. even my staff - i am tough with them but they can agree that i treat them as equals. i have no qualms about taking off my jacket and going into the kitchen to help wash the dishes if i have to. so i guess, that is what i am: i’m beyond just a chef, a maitre’d, a manager or a restaurateur.

i am someone who does this from the heart and who is passionate about it; whose only goal is to really make people happy at the end of the meal. at the end of the day, i am going to start all over again. i go back home to my wife and my kids, and i could have another day out or i’m eating out. my body is used to just following my mind.
